Tonight Ted is baking cookies! Yes it's really true. He volunteered to bring cookies for a prize for the team that donated the most to a charity at work. We don't bake cookies here at the homestead very often (in fact I can't remember if we ever have before). So we had to call my mom to get her Shortbread Cookie recipe. And since it's so yummy and a seasonal favorite I thought I'd post the recipe here for all to share... and also so I can find it next time I want it! :)

Ingredients

  • 1/2 cup corn starch
  • 1/2 cup icing sugar
  • 1 cup all-purpose flour
  • 3/4 cup butter (Mom says margarine will work almost as well)

Steps

  1. sift together corn starch, sugar, and flour
  2. soften butter with a wooden spoon (Ted "softened" it in the microwave).
  3. with a wooden spoon, blend the softened butter into the dry mixture until a soft smooth dough results
  4. shape into small (approximately 1 inch) balls. (If you want to make shaped cookies, you could roll it out & shape it with cookie cutters now)
  5. place 1.5" apart on an ungreased cookie sheet
  6. flatten each ball with a lightly floured fork.
  7. decorate with sprinkles or cherries
  8. bake at 300 degrees for 15 - 20 minutes until the edges are lightly browned (watch closely, it's easy to burn these!).

Yield: about 24 cookies

Sorry to say, he baked them to give away and now they are gone! We did taste test them though, yummy. Both kinds turned out really well. For anyone trying to make the shortbread recipe - they do come out really crumbley at first, we were worried, but once they cooled down they were great.

Just browsing....is this (2002) the last time you baked cookies or has there been unannounced cookie baking going on up there?

Uh, no, I am sorry to say that this probably WAS the last time we baked cookies. Hmm. Maybe we should try some more, especially since Peyton is old enough to enjoy them now.
